Simple Brazilian Beans Recipe
My work college asked me for the recipe of “my brazilian beans”. Every so often I take to work a big pot full of it and feed them all, they love it.
I was disapointed to find out there is no simple beans recipe on line, only the full feijoada, that would be far to heavy for the people here.
My simple recipe, is not exactly very simple, but it is lighter and very easy to do. However you will need a Pressure Cooker.
Ingredients:
300 g of Pinto Beans (or Black Beans if you want some a Feijoada style)
6 Kabanos sausages (or another dry/smoked type of sausage).
Bacon lardonsGarlicOnionSaltPepper1 Beef stock cube1 vegetable stock cube
Spices of your taste (my suggestion bayleaves)
**Pressure Cooker – a 5 litros one is ideal
Soak the beans overnight (or at least for 12 hours) in water.
Chop the onion, and fry with the chopped/crushed garlic.
Add the beans and cabana sausage.
Add boiling water to pan (~ 2 x solids volume).
Put top on pressure cooker, as soon as it gets up to pressure you can lower the heat and let it cook for 45 minutes to 1 hour.
Serve with rice and salads.
